These Peanut Butter Brownie Swirl Cookies combine the best of both worlds—a fudgy brownie and a soft peanut butter cookie swirled into one irresistible bite. They’re easy to make, require no mixer, and deliver maximum nostalgic flavor with minimal fuss.
Ingredients
For the Peanut Butter Dough:

½ cup creamy peanut butter

¼ cup softened butter

½ cup brown sugar

1 large egg

1 tsp vanilla extract

1 cup all-purpose flour

For the Brownie Dough:

½ cup melted butter

1 cup white sugar

⅓ cup unsweetened cocoa powder

1 tsp vanilla extract

¾ cup all-purpose flour

¼ tsp baking powder

¼ tsp salt

½ cup chocolate chips (optional but highly encouraged)
Instructions
Step 1: Preheat & Prep

Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 2: Make the Peanut Butter Dough

In a medium bowl, beat softened butter, brown sugar, and peanut butter until smooth.

Mix in egg and vanilla until creamy.

Stir in flour, baking soda, and salt. Set aside.
Step 3: Make the Brownie Dough

In another bowl, mix melted butter with sugar and cocoa powder.

Add egg and vanilla, then stir in flour, baking powder, salt, and chocolate chips.
Step 4: Swirl Time!

Take 1 tbsp of each dough, roll into balls, then gently press together and swirl.

Roll into one larger ball and twist slightly to marble the doughs.

Place on baking sheet and flatten slightly with palm or glass bottom.
Step 5: Bake

Bake for 10–12 minutes until edges are set and centers are soft.

Cool on sheet for 5 minutes, then transfer to wire rack.

Don’t overmix to preserve the swirl pattern.

Use room temperature butter for smooth dough.
