These Peanut Butter Brownie Swirl Cookies combine the best of both worlds—a fudgy brownie and a soft peanut butter cookie swirled into one irresistible bite. They’re easy to make, require no mixer, and deliver maximum nostalgic flavor with minimal fuss.


Ingredients

For the Peanut Butter Dough:

  • ½ cup creamy peanut butter

  • ¼ cup softened butter

  • ½ cup brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • ½ tsp baking soda

  • ¼ tsp salt

For the Brownie Dough:

  • ½ cup melted butter

  • 1 cup white sugar

  • ⅓ cup unsweetened cocoa powder

  • 1 large egg

  • 1 tsp vanilla extract

  • ¾ cup all-purpose flour

  • ¼ tsp baking powder

  • ¼ tsp salt

  • ½ cup chocolate chips (optional but highly encouraged)


Instructions

Step 1: Preheat & Prep

  • Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2: Make the Peanut Butter Dough

  • In a medium bowl, beat softened butter, brown sugar, and peanut butter until smooth.

  • Mix in egg and vanilla until creamy.

  • Stir in flour, baking soda, and salt. Set aside.

Step 3: Make the Brownie Dough

  • In another bowl, mix melted butter with sugar and cocoa powder.

  • Add egg and vanilla, then stir in flour, baking powder, salt, and chocolate chips.

Step 4: Swirl Time!

  • Take 1 tbsp of each dough, roll into balls, then gently press together and swirl.

  • Roll into one larger ball and twist slightly to marble the doughs.

  • Place on baking sheet and flatten slightly with palm or glass bottom.

Step 5: Bake

 

  • Bake for 10–12 minutes until edges are set and centers are soft.

  • Cool on sheet for 5 minutes, then transfer to wire rack.

Notes

  • Don’t overmix to preserve the swirl pattern.

  • Use room temperature butter for smooth dough.

 

  • If dough is sticky, chill it for 10 minutes in the fridge
