2 large eggs
1 teaspoon pure vanilla extract
Vegetable oil (for frying)

Instructions

Step 1: In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
Step 2: In another bowl, beat the eggs, sugar, milk, and vanilla until smooth.
Step 3: Gradually combine the wet ingredients with the dry, stirring gently to reach a pancake-like consistency.
Step 4: Heat about 2 inches of vegetable oil in a pot over medium heat (around 350°F). Test with a small drop of batter—it should sizzle.
Step 5: Drop tablespoons of batter into the hot oil. Fry 2 minutes per side until golden. Work in small batches.
Step 6: Remove with a slotted spoon, place on paper towels, and dust generously with powdered sugar.

Notes
