Ingredients

4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1 teaspoon onion powder
1 cup long-grain white rice
2 cups chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 teaspoon paprika
1 packet ranch seasoning mix
1/2 teaspoon dried thyme
1/2 cup chopped green onions (for garnish)


Instructions

Preheat your oven to 350°F (175°C). Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
In a large skillet, heat the olive oil over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown. Do not fully cook.
Spread the uncooked rice evenly in a 9×13-inch baking dish. Place the seared chicken on top.
In a bowl, whisk together chicken broth, heavy cream, sour cream, ranch seasoning, paprika, and dried thyme.
Pour the mixture over the chicken and rice. Sprinkle shredded cheddar cheese evenly over the top.
Cover with foil and bake for 45 minutes. Remove foil and bake another 15 minutes, until rice is tender and chicken is cooked through.
Let sit for 5 minutes, then garnish with chopped green onions.

Notes

Use long-grain rice, not instant, to avoid mushiness.
Try Monterey Jack or a cheese blend for variation.
Stir in steamed veggies like broccoli or peas before baking for a complete meal.
