Description
These Chocolate Covered Strawberry Brownies combine rich, fudgy brownies with fresh strawberries and silky ganache for a showstopping dessert that’s equal parts elegant and easy.
Ingredients
1 box brownie mix (for 8”x8” pan)
1 lb fresh strawberries, stems removed, halved
For the Chocolate Ganache:
1½ cups semi-sweet chocolate chips
¾ cup heavy cream (or up to 1 cup for a smoother texture)
Instructions
Preheat your oven according to your brownie mix instructions.
Prepare the brownie mix as directed and pour it into a greased 8”x8” baking dish.
Bake for 25–30 minutes, or until set. Let cool completely.
Arrange the strawberry halves cut side down across the cooled brownies.
Heat the heavy cream until hot (but not boiling) and pour over the chocolate chips.
Let sit for 1–2 minutes, then stir until smooth.
Pour ganache over the strawberries and spread gently with a spatula.
Notes
Slightly underbake the brownies for an ultra-fudgy center.
Microwave ganache for 10 seconds if it’s not spreading easily.
For a mousse-like texture, chill brownies for 30 minutes before serving.
